Ginger Snaps

1 3/4 cup all-purpose flour

1 1/2 tsp baking soda

2 tsp ground ginger

1/2 tsp all spice

1/4 tsp ground cloves

1 tsp cinnamon

1/4 tsp salt

1 1/4 cup unsalted butter (room temp)

1/4 cup granulated sugar

1/2 cup brown sugar

1/4 cup molasses

1 large egg

Cream together the butter and sugars until light and fluffy. Then slowly incorporate the molasses and egg. In a separate bowl whisk together the dry ingredients until thoroughly blended. Wrap dough and place in fridge for an hour. Once chilled, preheat the oven to 350 degrees. Shape dough into 1 inch balls and roll them in sugar (or don't). Place the shaped dough onto a non-stick cooking sheet (or grease your sheet) 2 inches apart. Bake for 13-15 minutes and enjoy!
